I would like to share a little bit about what makes our chocolate unique and important. The variety of cacao comes from indigenous tribes of Guatemala and Nicaragua. It is known as the Criollo variety of cacao.
Let's explore this interesting aspect of what we are all so familiar, chocolate. In the world of chocolate making, this variety of cacao stands out for it's amazing flavor profiles, yet it is avoided by commercial growers because it is smaller yielding and probe to desease. The Criollo is twice as la or intensive than the other varieties.
The secret often lies in the cacao bean itself. We're focusing on growing the rarest and most prized variety: Criollo cacao.
**The Three Main Types of Cacao**
- Forastero: The most common, making up 80-90% of the world's cacao. Hardy and high-yielding, its flavor is usually straightforward.
- Trinitario: A hybrid of Criollo and Forastero, balancing resilience and flavor complexity.
- Criollo: Considered the finest cacao-delicate, rare, with unique flavors.
Why does Criollo Stands Out?
Criollo cacao is exceptional, representing as little as 0.01% of global cacao production. Its beans are celebrated for their distinct flavor profile, often described as creamy, sweet, and aromatic, with notes of fruit, flowers, honey, and spices. Criollo chocolate has very little bitterness, offering a smooth taste.
## The Challenges of Growing Criollo
Criollo is rare because it's difficult to grow. The trees are fragile, disease-sensitive, and produce lower yields than other varieties. Farmers face more risk and work for less harvest. Most commercial chocolate uses easier, hardier beans, making Criollo chocolate hard to find.
